What is Artichoke?
Artichokes grow on stalks in the ground and are harvested as a food used in many cuisines and commonly in Mediterranean dishes. The artichoke varies in size from a small fist to a very large fist and are green with many thick and layered, pointed leaves. The points are sharp and often trimmed before cooking. The underside of the leaves are consumed and have a mild green and nutty taste. The heart is a favorite and used widely in salads and pizzas. The heart is firm and tender, with a similar flavor to the leaves and slightly sweet.
