What is Bresaola?
Bresaola is a cured meat product that originated in the Lombardy region of Italy. It is made by trimming a very lean cut of beef of all fat, rubbing it with salt and spices, and then hanging it to air-dry for 2 to 3 months. Deep red in color with a firm texture, it has a delicate flavor similar to prosciutto. It is sliced very thin and served with crusty bread and shaved parmesan, or as a topping on focaccia.
