What is Calf Liver?
Calf liver is considered a delicacy and is the liver of a baby cow, called a calf. Calf liver is somewhat similar to beef liver, but is much more tender in texture and sweeter in flavor. The liver is a shiny purple organ meat, considered to have many nutrients. One supposed difference between calf and beef liver is it is less toxic, because the animal is young. The general taste is umami. Calf liver can be prepped many ways and must always be cooked before consuming.
