What is Chicha De Jora?
Chicha de jora is a corn beer with a low alcohol volume commonly referred to simply as chicha and originated in Peru during the times of the Inca. The recipe involves chewing kernels of corn (maize) to activate the fermentation process aided by saliva. Modern-day chicha uses a method of boiling germinated corn and sugar to assist in a 4-6 day fermentation process. Chicha de jora is sour and mild with a white or pale golden color.
