What is Chulpe Corn?
Chulpe corn is a very different variation on popped corn. The pointy kernels are pan-cooked, but rather than puffing up, they remain crunchy yet chewable, like a corn nut. These yellow kernels are much larger than the variety used for pop corn and are called chulpe maiz. They have a pointed end and may become slightly blackened in spots during the cooking process. They are salted and have a nutty umami flavor.
