What is Crunchy Spicy White Tuna?
Crunchy spicy white tuna, also known as butterfish or escolar, is used as a sushi filling and can be found in poke bowls and other Japanese/Hawaiian inspired seafood dishes. The white tuna is finely chopped and mixed with mayonnaise, sriracha, and spicy shichimi togarashi seasoning. To add crunch, crispy tenkasu; deep fried flour bits are added to create texture in addition to flavor.
