What is Dosa Batter?
Dosa batter is a type of fermented rice and lentil batter used in Indian cuisine. Once fermented, the batter is thick and can be used for the savory Indian pancake, called an uttapam. For a dosa, with its crepe-like style, the batter must be thinned. This is done by adding water, until the batter is like a very runny pancake batter. The dosa batter is cream colored with a tiny bit of grit to it, from the ground rice and lentils. Dosa batter smells fermented. Once cooked it may have a mild tangy flavor.
