What is Edam Cheese?
Edam cheese is a hard cow's milk cheese. The cheese is sold as a large round ball, wrapped in red paraffin wax. The color of the cheese is pale yellow. When Edam is young it tastes mild, salty and nutty. As it ages it becomes stronger in flavor and firmer. This cheese rarely spoils, only hardens.
