What is Escarole?

Escarole, also called Batavian endive, is a leafy plant in the chicory family. The leaves are green and have a slightly bitter taste. Outer leaves are dark green and chewy, while the inner leaves are light green and tender. It can be cut into strips and cooked to add to soups or bean dishes, or served as a side dish after cooking in boiling water until tender.
