What is Extra Lean Beef?
Extra-lean beef is sourced from specific cuts of the cow. These include eye of round steak and roast, sirloin tip side steak, and top round steak and roast. These cuts have a lower fat content, less marbling, and are higher in protein content. The lack of fat means that the meat often has a dry texture, but cooked properly it can still be juicy and tender. The flavor is umami.
