What is Flank Steak?
Flank steak is a cut of beef from the rear underside of the cattle's belly. It may be occasionally marked as London Broil, although this is a method of cooking and not a cut. The cut is a piece of lean meat. It is thin, long and wide with a red color. Flank steak tends to be a little tough, but has an excellent meaty flavor and makes a great beef fajita.
