What is Fresh Mozzarella?
Fresh mozzarella is traditionally made from water buffalo milk, though much of it is made with cow's milk. Fresh mozzarella comes packed in water and is formed into a white ball, a bit smaller than a tennis ball. It has a high water content and is therefore lower in fat. The texture is soft and smooth yet firm. The flavor is mild and slightly acidic. Water buffalo mozzarella has a highly prized flavor and greater complexity than cow's milk mozzarella. When melted, this cheese is extremely stringy.
