In fresher goat cheeses, the texture is crumbly and moist, with a creamy quality, making it easy to spread. Goat cheese is rarely aged more than four months. The older it is, the firmer the texture. Goat cheese has a distinctly tart and creamy flavor, that varies depending on its age. Some fresh varieties are coated in herbs. Goat cheese pairs wells well with pasta, salads and fruit.
