What is Gouda Cheese?
Gouda is a type of cheese and umbrella name for any cheese in this category. It does not have precise specifications for how it is made and may come from cow's milk, sheep's milk, or goat's milk and aged for various time lengths. Young gouda tastes a bit sweet and mild with a soft texture. Older gouda takes on that characteristic yet gentle pungency and is saltier and harder with a pale golden color. Occasionally tiny crystals that look like salt are found in aged gouda, this is in fact an amino acid and the sign of a properly aged gouda.
