What is Hard Salami?

Hard salami is a pork and/or beef product and sometimes considered a deli meat. The meat is cured using salt, aging and sometimes smoke. Hard salami is shaped into a long solid tube shape, with a thin casing around it. The texture is dense and somewhat greasy, with a reddish color and often dots of white fat. Hard salamis are almost always smoked, while genoa salami is more tart in flavor. In general salami has a meaty and salty taste, with a slight tang to it. There are many varieties of salami some have herbs, while others are spicy. Salami is served as an appetizer or on sandwiches, pizzas and more.
