What is Ikura?

Ikura, or salmon roe are fish eggs from the salmon and are a prized caviar. They are round and range from 1/4 to 1/2 an inch in diameter and are a yellow/orange or bright orange. They have a slightly translucent quality and a slippery outer texture. Biting into a salmon roe creates a gentle popping sensation. The flavor is smooth and salty with a distinct salmon flavor. Salmon roe is popular on Russian blini pancakes with cream and is used for many other dishes as well. It is best served cold.
