Kasseri cheese is a semi-hard cheese with a fat content of 25 -40%. It is aged for four months and is made from sheep's milk and 20% or less of goat's milk. Kasseri is pale yellow and has a texture that is similar to muenster or provolone, providing a gentle springiness.
