What is Kogomi?
Kogomi is the Japanese word for unfurled fern tips. Ferns grow in wooded areas and when they are young the tops can be harvested and eaten. Kogomi, also known as ostrich fern has a curled shape and is green and tender. Upon immediate harvest the flavor is mild, nutty and a little buttery and vegetal. The texture is soft and tender with a bit of chew. The flavor takes on a bitter taste if not cooked immediately after harvest. Kogomi is used in traditional Japanese cooking.
