What is Lentils?
Lentils are a legume with numerous varieties and four main colors: brown, green, red and yellow. These can further be broken down into specific names with precise flavors and shapes, some include the french lentil, black beluga lentils and in Indian cuisine the number of lentils used is far larger than in the Western world. Lentils are small and round, generally the size of an apple seeds, or slightly bigger. They are hard and must be cooked before consuming. The flavor changes depending on the lentil, but generally a cooked lentil tastes earthy, a little meaty and can be bland when plain. The texture is also meaty and a little starchy.
