What is Masa Harina?
Masa harina is made from dried corn kernels that have been soaked in a solution of lime (calcium hydroxide) and water. The lime softens the corn, in addition to other added benefits and creates a soft cornflour that is very different from corn meal. Masa harina is used to make tortillas and is an ingredient in other Latin dishes.
