The mussel is small and has a soft meaty texture when cooked properly. If overcooked, the mussel is tough and rubbery. Mussels have a ocean/marine taste that is salty, with a hint of fishy sweetness. Mussels are good cooked with wine, butter and herbs, though there are many variation for serving them.
