Oaxaca cheese, also referred to as quesillo is a Mexican cheese made in the state of Oaxaca. Made from cow's milk, it comes shaped as a disc or as a ball and is semi-firm with a texture similar to the mozzarella. The flavor is reminiscent of Monterrey jack.
