What is Pastrami?
Pastrami is a beef based deli meat made by cooking, brining and curing the beef. No particular cut is used for pastrami, though it often comes from the belly of the cow. Pastrami has a dark outer coating of herbs and spices. When it is sliced, a pinkish red meat is revealed. The texture is a perfect blend of dry and moist with a meaty chewy. The flavor is robust, smoky and peppery. It goes well on sandwiches.
