What is Pork Loin?
Pork loin is a large cut of meat from the leg to the shoulder of the pig along its side. It has a thin layer of fat along the top and is quite lean. Because of this, the flavor is milder than other cuts. It tastes meaty and umami. The texture is tender and turns white when cooked. The raw pork loin is a medium pink/red shade and must be throughly cooked before consuming.
