What is Pork Ribs?
Pork ribs without the bones are not technically pork ribs. Instead this cut of meat comes from the shoulder of the pig and is cut into rib shapes. This meat is lean and can be cooked more quickly as there is less fat to keep it from drying out. Pork ribs without the bones are also called pork loin country-style ribs. This cut is used in many cuisines, including American and Thai. The flavor is meaty and umami.
