What is Provolone Cheese?

Provolone is a type of aged cow's milk cheese. It is commonly sold in a fat log shape, but can be pear or cone shaped. It is aged 2-4 months, or longer. The longer this white cheese is aged, the sharper the flavor. Often it has a semi-firm texture and is soft and a bit creamy. The flavor is mild, milky and a bit salty.
