What is Puff Shell?
Puff shells are made from puff pastry, also called pate a choux. It is made from only butter, water, flour and eggs. The dough is piped into round domes on a baking tray and the moisture from the water puffs the dough up so that the inside is hollow and the outside has a gentle golden crust. The flavor is mild and eggy. Puff shells are generally filled with a variety of pastry creams.
