What is Rhubarb?
Rhubarb is a fibrous vegetable that is often used in desserts. It is rhizome that grows in large stalks of 12-18 inches in height. The bottom of these talks are white and fade into red with one very large green leaf at the top of each stalk. Rhubarb can be eaten raw, but it is best to eat it cooked as the flavor is extremely tart. Generally rhubarb is cooked down with sweetener until it is soft and mushy. The taste becomes lightly tart, bright and sweet.
