What is Roe?
Roe are mature fish eggs that come from a female fish. Roe comes from any fish, including and not limited to salmon, trout and multiple others. Commonly known roes are masago, ikura and tobiko. These eggs vary in size from a pinhead to a pomegranate seed and include many colors, some of which are created using natural dyes. Every type of roe varies in flavor, but all have a gentle fish taste that is usually delicate and salty. Roe is not caviar, which is a cured fish egg, using salt or smoke.
