What is Skipjack Tuna?
Skipjack tuna is a type of tuna and the smallest and most abundant of tuna used as a commercial food source. They have dark backs and silver bellies. Skipjack is flaky and has a white to pale pink flesh. When raw, the flesh is red. Skipjack is commonly used in canned tuna labeled "chunk light" and is used to make bonito flakes, an important ingredient in Japanese cuisine. it is a fishy tasting fish with a relatively strong flavor.
