What is Almond Cream?
Almond cream also known as frangipane is a rich pastry cream made from finely ground almonds, sugar, butter and eggs. These four ingredients are blended together to form a spreadable topping or filling. The texture is buttery with granules from the almonds. The color is cream and the flavor is sweet, mild and gently nutty. Almond cream is used as a base for tarts and baked goods, or as a filling for pastries.
