What is Cream Of Tartar?
Cream of tartar, scientifically known as potassium bitartrate, is a byproduct of wine fermentation. It is a white powdery substance with acidic properties. It looks very similar to baking powder and acts in some of the same ways. Cream of tartar is used specifically in baking to help the product rise as it bakes. It is also helps to stabilize eggs and cream. A little bit goes a long way.
