What is Genoa Salami?
Genoa salami is a hard Italian salami made from pork. In rarer instances it may contain veal. The salami is seasoned with salt, pepper and garlic. It is shaped into a long round log with slices about 2 inches in diameter. The salami has a skin around it and the meat itself is a reddish pink color. The flavor is fermented, salty and umami. Genoa is usually sliced thin and served as an appetizer or a sandwich topping.
