What is Japanese Cucumber?
Japanese cucumbers are long and slender, somewhat like the English cucumber, though smaller. They can be slightly over a foot in length, with smooth and green skin that has gentle ridges. The Japanese cucumber is nearly seedless and the seeds that it does contain are small and undeveloped. The flesh is crisp, firm and partially juicy, with a pale white/green color. The flavor is mild and vegetal with a melon taste. They are best served raw.
