What is Katsuobushi?
Katsuobushi, also known as bonito flakes is made from dried skipjack tuna. However, bonito is made from younger fish than katsuobushi. Katsuobushi is paper thin flakes of fermented skipjack tuna. The color of the flakes are a pale tan tone and each one is usually no more than an inch or so in length and width. The flavor is strong with a distinctly fishy flavor and has a smoky and fermented taste.
