What is Sausage?

There are many kinds of sausage. Often made from pork, varieties from around the world vary in flavor, color and size. Some sausages are white, red, brown, or orange. All have a log shape on the slimmer side. Many pork sausages come from Europe, for examaple the bratwurst which has a mild but savory flavor, or chorizo which is hot, red and spiced, or Andouille which is smoky and spicy. Sausage should always be cooked thoroughly before consuming.
