What is Seared Tuna ?

Searing is a method of cooking that helps this naturally dry fish remain moist. The tuna is briefly cooked on a very hot oiled surface. The outside of the cut of fish is lightly browned, with a thin grey inner ring where meat is cooked. The majority of the center remains raw and red.
