What is Smoked Gouda Cheese?
Gouda is a type of cheese and umbrella name for any cheese in this category. It does not have precise specifications for how it is made and may come from cow's milk, sheep's milk, or goat's milk with varying ages. Smoked gouda is made by smoking the cheese over hickory wood chips. This imparts a complementary smoky flavor to the salty and pungent cheese. Occasionally tiny crystals that look like salt are found in aged gouda, this is in fact an amino acid and the sign of a properly aged gouda. The color is a yellow cream and the texture ranges from hard to semi-soft.
