What is Soft Shell Crab?
Soft shell crabs are harvested just after their exoskeleton molts. The crabs are small and once eaten have a very delicate shell that is edible. Soft shell crabs are entirely edible, minus the face and a few other parts. They are often fried or pan cooked and have a delicate sweet flavor with a hint of ocean salinity. The texture is crispy and easy to chew. Soft shell crabs can often be found in sushi.
