The grain is harvested from the tall bushy sorghum plant and the tiny, white, round sorghum grains are used to make flour and syrup, or be cooked and eaten whole. Sorghum is hard until it is boiled and the flavor is mild and earthy. It is also used as a starch and to add texture to various dishes.
