What is Sturgeon?
Sturgeon is a freshwater fish, though they are occasionally known to venture into the ocean. The meat is pink when raw and when cooked turns white. This lean fish has a firm flesh that is not too different from chicken, while maintaining some flake. The flavor varies on whether it is wild or farm raised. Farm raised sturgeon taste fishy and mild. Wild caught may be milder or stronger and has been described as tasting similar to lobster.
