What is Sweet Shrimp?
Sweet shrimp, also called spot prawns or amaebi are a large shrimp with a short season of availability. They are favored for their firm texture and sweet taste, which is sometimes described as being similar to lobster. Though shrimp is not usually eaten raw, this one is often eaten raw as they are at their sweetest before being cooked. The head is eaten too, as it is prized for its juicy flavor. Spot shrimp cook quickly and should never be mushy, a mushy spot prawn is a sign that it has gone bad.
