What is Tamagoyaki Omelette?

Tamagoyaki omelette is type of sweet and savory Japanese omelette made of layers. Eggs are mixed with seasonings like mirin, sugar and salt. A thin layer is then poured into a hot rectangle shaped pan, used specifically for tamagoyaki. Many layers of the egg are cooked and then rolled tightly together. The tamagoyaki is sliced into rounds and served as is or put in sushi and other dishes. The tamagoyaki is yellow and soft with a flavor that is gently sulfurous, sweet and savory.
