What is Umeboshi?
Umeboshi, or umeboshi plum is a type of pickled plum used in Chinese, Japanese and other East Asian cuisines. The plum is harvested when ripe and either packed in a barrel of salt, or placed in a salt and vinegar solution. The pickled ume plum is mauve colored and slightly wrinkled. The texture is very soft and usually contains the pit. The flavor is extremely salty and sour. Small amounts are added to flavor or garnish a dish.
