What is Unagi?

Unagi is a Japanese dish made by grilling eel prepared in a sweet and salty sauce of soy, sugar and seasonings. The eel is then steamed to remove excess fat, or cooked a bit longer over the grill. The flavor is mild and buttery, the texture is tender and crispy on the outside. The unagi has a golden brown color when cooked and is white on the inside. This seafood dish is served hot.
